Zucchini Fritters

To make Zucchini Fritters (Maryann Style!)
Take 2 Zucchinis, Grated and a teaspoon of Salt.
Mix the two ingredients together in a large bowl and set aside for 10 minutes.
This will draw the water out of the zucchini…SQUEEZE the water out. Place zucchini into a big bowl.
After that add:
Beat 2 large eggs
Chop ½ cup Green Onions (Option: Sauté ½ yellow or white onion & garlic if desired till soft)
While you wait, stir together:
1 cup fine breadcrumbs
½ cup Parmesan cheese
1 tea baking powder
½ tea salt & ½ tea pepper and
½ tea cayenne
When mixed add the seasonings to the Zucchini Mixture.
Heat Olive oil in frying pan & scoop a heaping tablespoons of mixture into pan. Fry for 2 minutes & flip. Remove when golden brown.
Serve with sour cream
