Increase of Fast-Food Salads Not Helping Farmers

Fast-food restaurants are promoting salads on their menus this spring, but observers say that´s had only a small impact on lettuce prices.
According to the California Farm Bureau Federation, market analysts say fast food companies have contract with shippers for a set amount of lettuce and other salad crops. If consumers purchase more of the salads than the fast-food companies anticipated, additional lettuce and other vegetables would be purchased on the spot market, which would have a greater impact on the prices farmers earn.
