| 1 | cup | roma tomato, chopped, about 2 tomatoes | 
| 1/2 | cup | celery | 
| 1/2 | cup | onion, roughly chopped (about 1/2 large onion) | 
| 1 | cup | shredded carrots | 
| 1/2 | Tbsp | cumin | 
| 1 | Tbsp | garlic, minced | 
| 1/4 | tsp | salt | 
| pinch | black pepper | |
| 1-1 1/2 | tsp | sauce (from a can of chipotle peppers in adobo sauce) | 
| 2 | cups | Vegetable Broth | 
Directions
Grease the crock pot, add quinoa & all the rest. Cover with 2 cups vegetable broth.
Cook for no longer than 3 hours. I did 1 hour on high & 1&1/2 on low. Top with chopped cilantro.
