Momma’s Pot Roast

1 | can | Cream of mushroom soup |
1 | envelope | onion soup mix |
2 | Soup cans of water | |
1 | large | fresh onion, cut up |
4 | Irish Potatoes cut in bite size | |
4 | carrots, scraped and cut in bite size | |
2 | sweet potatoes, peeled and cut in bite size | |
2 | Tbsp | olive oil |
To prepare:
In a 4 quart pot, heat oil, sear roast on all sides. In a bowl, mix mushroom soup, dry onion mix soup and water. Pour over roast. Place chopped onion in pot. Bring to boil, cover, cut to med. low, cook 2 and a half hours, add vegetables and cook 30 minutes more.
