Cordon Bleu Submarine Sandwich

A great way to use leftover roast chicken and simply awesome served on a large French bread roll. This is perfect fare at a televised football game party or afternoon picnic in the park.

1 | loaf | Sweet French bread sliced in half lengthwise |
12 | oz | roasted chicken breast, thinly sliced |
4 | oz | Parma ham (prosciutto) very thinly sliced |
6 | oz | Mozzarella cheese thinly sliced |
2 | tbsp | spicy brown mustard |
2 | tbsp | mayonaise |
Salt and pepper to taste |
To prepare:
Spread the spicy mustard over the bottom half of the French bread, next layer the prosciutto over the mustard. Stack the chicken breast evenly over this layer and top with the mozzarella cheese. Salt and pepper lightly and place under a broiler about 4″ from the heat. Broil this for 3-5 minutes, or until the cheese is browned and bubbly. Spread the mayonnaise on the untoasted top half of the bread and place on top of the meat and cheese. Slice the sandwich into 2-3 inch slices and serve while still warm.
