Turkey Piccata

Elegant and delicious, this is a really quick recipe that showcases the flavor of turkey. It is also a fresh take on what is normally a hard sell with families, that being turkey served outside of the traditional holiday or big family dinner of roast turkey with the trimmings

3 | tbs | flour |
1 | tbsp | oil |
3 | tbsp | butter |
1/2 | teaspoon | garlic salt |
1/4 | tsp | pepper |
2 | tbsp | capers |
1/2 | cup | white wine |
2 | tbsp | lemon juice |
Salt to taste |
To prepare:
Place the cutlets between two sheets of wax paper and pound with a mallet until approximately ¼” thick, season with salt and pepper and then lightly dredge in flour. Shake off excess flour and sauté over medium high heat until browned on each side. Add in the butter, pepper and garlic salt and reduce heat to medium low. Slowly add in the lemon juice and wine, stirring constantly to keep the sauce from breaking. Sprinkle the capers over the sauce and return to a simmer. Serve immediately with garlic mashed potatoes and sautéed summer squash.
