Cabbage Salsa

This is a refreshing change from your normal tomato-based salsas that are the staple of just about any party that includes tortilla chips. With tomatoes being so expensive lately it is also a break on the pocketbook with only a few ingredients needed to make it. Try it served with fish tacos or simply with some warm tortilla chips and cold drinks.

4 | cups | white cabbage chopped fine (a small head of cabbage should do) |
1 | cup | yellow onion chopped fine |
1 | cup | cilantro chopped |
1/2 | cup | carrot chopped fine |
1/2 | cup | jalapeno pepper seeded and diced fine (about 3 large peppers, leave seeds in for extra spicy) |
3 | tablespoon | garlic, crushed |
3 | tablespoon | lime juice |
1 | tablespoon | salt |
Black Pepper to taste |
To prepare:
Combine cabbage, onion, cilantro and carrots in a large enamel bowl. Mix ingredients until well blended then add the chopped jalapeno, garlic, and lime juice. Stir thoroughly and season with salt and pepper. Set aside at least 45 minutes or longer then serve chilled with tortilla chips or as a side to grilled pork or fish tacos.
