Ginger Broccoli Beef

This is a classic dish from Chinese cuisine that is delicious as well as extremely easy to prepare. The beautiful mixture of bright greens, oranges and pale white accent the dish in its finished form and bring a whole new life to the basic every day vegetables that are included in this dish.

6 | heads | broccoli trimmed into small (1″) florets |
3 | tablespoon | garlic crushed |
1 | tablespoon | fresh ginger peeled and crushed |
1 | 6 oz | can sliced bamboo shoots |
2 | small | carrots peeled and sliced thinly along bias |
1/2 | lbs | snow peas washed and stemmed |
1 | 12 can | baby corn (optional) |
6 | tablespoon | soy sauce |
2 | tablespoon | cornstarch |
To prepare:
Marinate the beef strips in 3 tbsp soy sauce and the crushed ginger and garlic cloves approximately 15 minutes. Heat a wok or large sauté pan over high heat and add 2 tbsp vegetable oil until shimmering hot, Next, add the marinated beef and stir-fry quickly until browned, remove from pan and add 1tbsp oil and the broccoli and carrot slices. Continue stir-frying over high heat until broccoli begins to brighten and turn tender, or about 3-5 minutes. Add the bamboo shoots baby corn and snow peas and continue stir-frying about 1-2 minutes more. Add the beef back to the mixture and mix well. Combine remaining soy sauce with cornstarch and 3tbsp water and pour into the wok. Heat until thickened and serve immediately over steamed rice or alongside fried rice.
