Apple Pie Filling

It’s apple season, so that must mean it’s Apple Pie season, too. Here is a lovely recipe for filling so those apples won’t be crunchy inside your pie.

4 1/2 | cups | Sugar |
1/4 | teaspoon | Nutmeg |
10 | cups | Water |
1 | cup | Cornstarch |
1 | tsp | Salt |
24 | cups | Apples; peeled,sliced |
2 | tsp | Cinnamon |
3 | tsp | Lemon Juice |
To prepare:
- Blend sugar, nutmeg, cornstarch, salt, cinnamon. Add water and cook till clear. (I used a large nonstick pot to cook this in and had no problems with sticking at medium to medium high temperature).
- Add apples and lemon juice and cook till apples are soft. After the apples have cooled, I store them in large (gallon size) zip lock bags.
- A nifty trick is to freeze the bag sitting in the pie pan in the freezer. Your apples will then freeze right in the shape of a pie, drop it in your shell, when ready and bake!!!!
