Maryann’s Veggie Burgers!

1/2 | tsp | Smoked paprika |
1/2 | tsp | Chili powder |
1/2 | tsp | Sea salt |
1/4 | tsp | Black pepper |
1/4 | tsp | Garlic powder |
1/4 | tsp | Onion powder |
1 | can | Black Beans (rinsed & drained) |

1 | cup | fresh Spinach |
1/2 | cup | Panko breadcrumbs |
2 | medium | eggs |
1 | Tbsp | Salsa (or tomato paste) |
1/3 | cup | chopped walnuts (optional) |
1/2 – 3/4 | can | cooked rice |
To prepare:
Mince first 4 ingredients (Use a handheld chopper or use a food processor)
Whisk together next SEVEN ingredients and cut into the Veggie mixture.
Spread this mixture on a foil-lined cookie sheet & roast at 400 degrees for 15 minutes.
(When it starts turning brown around the edges, stir & press down into a thin layer)
Meanwhile, spread black beans onto a separate cookie sheet also lined with foil or parchment paper.
Remove veggie tray, stir…press & continue roasting for another 15 minutes. At this time place the tray of black beans in the oven too.
After 15 minutes remove & blend the Beans & Veggies together. Press together and roast for another 15 minutes.
Remove & let cool.
Chop spinach fine. (Walnuts too if you’re using them)
In bowl beat eggs, add Panko and salsa. Add bean & veggie mixture.
Fold in rice.
Form patties & pan fry in a little olive oil. (Or cook and freeze them!)
