Mustard Vinaigrette Dressing/Dip

Fairly simple to make, this dressing is one of those gourmet recipes that tastes expensive but really is easy on the pocket book. Try this as a dip with raw vegetables instead of traditional ranch dressing, you will be impressed.

2 | tablespoon | lemon juice |
4 | cups | vegetable oil |
3 | tablespoon | prepared brown mustard |
2 | tablespoon | garlic mustard |
1/2 | tablespoon | honey mustard |
1/2 | teaspoon | onion powder |
1/2 | teaspoon | garlic powder |
1/4 | teaspoon | black pepper |
1/2 | teaspoon | dried basil |
1/4 | teaspoon | salt |
To prepare:
Crack eggs into a non metal mixing bowl add the lemon juice, salt, mustard and spices. Whisk together until well blended. Next, add the oil slowly (at a drizzle at first) while whisking the egg mixture vigorously. Continue whisking ingredients together, being careful not to let it “break”, until it reaches the thickness of mayonnaise. Adjust flavors to taste and chill. Serve over mixed green salads or with a vegetable platter.
