Rice pudding

This is another classic comfort food for me, as it was always a major treat when it was made by my Mother, Grandmother, or my Aunt. Each one made it slightly different, one adding more cinnamon, and another preferring more raisins than the others. But the end result was always delicious warm or chilled.

5 | cups | white rice, steamed and completely cooled |
4 | cups | milk |
5 | eggs | |
3/4 | cup | raisins |
3/4 | cup | sugar |
2 | tsp | vanilla extract |
1 | tsp | cinnamon |
Pinch ground nutmeg | ||
Pinch ground cloves | ||
Pinch salt |
To prepare:
Whisk the milk and eggs together in a large bowl until blended smoothly. Next, add in the sugar, vanilla, cinnamon, salt, nutmeg and clove, Fold this mixture into the cooled rice and raisins and pour into a 9×9 glass baking dish. Place in larger baking dish and add about 1″ water. Bake pudding at 350 degrees for 1 hour or until toothpick inserted in center comes out clean. Remove from oven and allow to cool, serve warm with a scoop of ice cream or chilled with a sprinkling of nutmeg.
