Tortellini in Creamy Tomato Basil Alfredo Sauce

This is a delicious variation on the classic Alfredo sauce. With nothing more than the addition of tomato and fresh chopped basil, a whole new depth and dimension is added to an already decadent sauce. It also makes for a dinner that is as pleasing to the eye as it is to the palate, with a delicate rose color highlighted with flecks of green basil and a perfumed scent that plays off of the velvety richness of the sauce draped over cheese tortellini. Presented family style in a large bowl garnished with a few cherry tomatoes, a sprig of basil leaves, and just a sprinkling of parmesan cheese. You have an instant classic on your hands.

3 | cup | whole milk |
4 | tablespoon | butter (real butter not margarine) |
3/4 | cup | grated parmesan cheese |
1 – 1/2 | tablespoon | garlic crushed |
1/4 | cup | fresh basil, chopped |
1/2 | cup | tomato juice |
2 | tablespoon | flour |
To prepare:
Heat a large sauté pan over medium heat and melt the butter, add in the crushed garlic and basil and sauté until garlic is translucent. Reduce heat and add in 2-1/2 cups milk and bring just to a simmer. Whisk in the tomato juice and gradually add in the parmesan cheese simmering and stirring frequently. Whisk the flour and remaining milk together and stir into the sauce. Prepare tortellini according to package directions then drain and add into the sauce. Stir to coat then serve in a large bowl with a chilled white wine and enjoy!
