It’s apple season, so that must mean it’s Apple Pie season, too. Here is a lovely recipe for filling so those apples won’t be crunchy inside your pie.

Amount Measure Ingredients
4 1/2 cups Sugar
1/4 teaspoon Nutmeg
10 cups Water
1 cup Cornstarch
1 tsp Salt
24 cups Apples; peeled,sliced
2 tsp Cinnamon
3 tsp Lemon Juice

To prepare:

  • Blend sugar, nutmeg, cornstarch, salt, cinnamon. Add water and cook till clear. (I used a large nonstick pot to cook this in and had no problems with sticking at medium to medium high temperature).
  • Add apples and lemon juice and cook till apples are soft. After the apples have cooled, I store them in large (gallon size) zip lock bags.
  • A nifty trick is to freeze the bag sitting in the pie pan in the freezer. Your apples will then freeze right in the shape of a pie, drop it in your shell, when ready and bake!!!!
