Lemon Pepper Tuna and Bean Salad

1 | cup | peeled, seeded and chopped cucumber |
1/2 | cup | fat-free plain yogurt |
1/4 | measure | finely chopped flat-leaf parsley |
1 | jalapeno chile pepper, chopped | |
Salt to taste | ||
9 | cups | packaged spring salad mix |
To prepare:
In a large bowl, toss together beans, tuna, corn, cucumber, yogurt, parsley and chile pepper. Season with salt. Divide salad mix among six chilled plates. Divide tuna mixture among the plates.
