Reduced Sugar Tiramisu Trifle

One of my favorite desserts, tiramisu is basically the Italian answer to cheesecake, the lovely texture of mascarpone, the nutty flavor of espresso. If it isn’t the king of desserts, it surely must be among the royal elite. This recipe gives the taste and textures of classic tiramisu but with reduced sugars for the diabetics or diet conscious among us all.
This is a really simple to prepare dessert that will fool even the most die hard sugar junkie by its smooth mouth feel and wonderful taste.

1 | small | package sugar free vanilla pudding mix |
2 | cups | cold 4% (whole) milk |
12 | oz | mascarpone cheese |
12 | oz | cold sweetened espresso |
4 | Maria Tea biscuits | |
Cinnamon or chocolate powder for garnish |
To prepare:
Whisk pudding mix and cold milk together in a small steel mixing bowl until set. Next, whisk in the mascarpone cheese and blend until smooth. Set aside in refrigerator until well chilled. Place 1 tea biscuit per serving in small dessert dishes or cups, place approximately 2 tablespoons espresso over each cookie and then spoon tiramisu mix over the top of the cookie. Sprinkle with cinnamon or cocoa powder and serve immediately.
