Upside Down Shepherd’s Pie

Last week I told you how to get the skins off of those potato’s easily, right? (see Potato Salad Recipe). Now that you have an excess of peeled potato’s here is a recipe that will help you use them up, and give your family a nice dose of comfort food too!

Mashed Potatoes | ||
1-2 | lb | Ground Beef |
1 | cup | Diced Carrots |
1 | cup | Onions |
1 | cup | Celery |
1 | cup | Peas |
1 | cup | Corn |
1 | package | Brown Gravy Sauce mix |
Salt and pepper to taste |
To prepare:
Brown the beef, remove from skillet and add a bit of butter or oil to the pan. Saute the (diced) carrots, onions & celery…till soft. (can use more or less than a cup as you like it)
Toss in peas and corn. Salt & pepper, to taste.
Grease a pie dish or casserole dish and plop your mashed potatoes in. Top with sauteed veggies the cover with brown gravy. Bake at 350 for about 30 minutes.
